Argel Gordillo Guillama

I started as a line cook more than 30 years ago. Over time I became one of two executive chefs at a 525-room resort with seven restaurants in Varadero, Cuba.

I then moved into running the food & beverage department, where I learned the other half of the business: the dining room, service, suppliers and the numbers. That double view, chef and director, is the foundation of my consulting work.

I have worked in hotels, restaurants and tourist complexes in Cuba, the Cayman Islands and Honduras, where I ran food & beverage for a beach club and a restaurant in Roatán. Today I help owners and investors turn their operations into organized, profitable businesses.
